The glycemic index, or GI, describes how rapidly and strongly a carbohydrate-containing food raises blood glucose under standardized testing compared with a reference food. It can be useful, but it cannot judge a food or an entire diet by itself.

The short answer

Low GI is commonly defined as 55 or less, medium as 56–69, and high as 70 or more. GI does not account for the amount of carbohydrate actually eaten, so portion size and glycemic load also matter.

What changes a food’s GI?

Starch type, cooking time, fruit ripeness, grinding, processing, fiber, and food structure all matter. Al dente pasta can behave differently from very soft pasta, and a ripe banana differs from an unripe one.

Mixed meals differ from isolated foods

Protein, fat, and fiber can alter gastric emptying and the glucose response. The GI of rice alone therefore does not perfectly predict rice eaten with chicken, vegetables, and oil. Individual responses also vary.

How GI can be used in sport

Before exercise, digestive tolerance and meal timing matter more than chasing a number. When rapid glycogen restoration is required between closely spaced sessions, faster-digesting carbohydrate may help. For routine meals, less-processed, fiber-rich foods usually support broader health goals.
